PATTY CAKES
Ingredients
3 tablespoons butter
1 cup of self raising flour
1 egg
¼ teaspoon vanilla
pinch salt
¼ cup milk
Method
- Beat butter and sugar to a cream
- Add lightly beaten egg and vanilla. Beat well.
- Stir flour and salt together.
- Fold in dry ingredients alternately with milk and mix well.
- Drop heaped teaspoonfuls of mixture into well-greased patty tins or papers.
- Bake in a moderate oven for 10 to 15 minutes.
- Cool on a wire rack.
- Ice with butter icing
